Ever heard of breakfast popsicles?
– 500g Greek yoghurt
– 2tsp honey
– 2tsp chia seeds
– 2tsp roughly, roughly chopped mint
– 150g plain granola
– 150g blueberries, roughly mashed, leaving a few berries whole
– 100g raspberries, roughly mashed, leaving a few berries whole
Combine the yoghurt with honey, chia seeds and mint.
Layer granola, berries and yoghurt mixture in popsicle moulds.
Tap the mould regularly while layering the ingredients so that the yoghurt will run into the spaces between the berries and the granola.
Swirl ingredients around with the back of a spoon or a wooden skewer for a marbled effect.
Place an ice cream stick into each mould and freeze for at least four hours.
To loosen the popsicles, dip the moulds into hot water for a few seconds.
Gently remove and serve immediately.
