Finger licking good…We’re so indulging in home cooked fried chicken tonight!
60ml (4 tbsp) water
250ml (1 cup) hot chilli sauce
260g (2 cups) cake wheat flour
5ml (1tsp) paprika
15ml (1tbsp) mixed dried herbs
15ml (1tbsp) baking powder
pinch of salt
pinch of black pepper
oil for deep-frying
1kg chicken pieces
1. In a mixing bowl, beat eggs with water. Add hot sauce and whisk together.
2. In another mixing bowl, combine flour, paprika, mixed dried herbs, baking powder, salt and pepper.
3. Heat oil in a large, deep pot. Drop a few chicken pieces into the egg mixture and coat thoroughly. One piece at a time, roll chicken in the flour mixture and drop into hot oil.
4. Fry chicken until brown and crisp. Drain on paper towel. Season with salt and pepper.
