We have to be honest. We’re not going to keep our bottle of TOKARA RESERVE COLLECTION ELGIN SAUVIGNON BLANC 2017 until 2027. It will, according to the Tokara vineyards winemaker, benefit from aging until then, but luckily, he tells us, it drinks well now too. Which it does (we tasted … it was the polite thing to do). A beautiful pale straw colour with vibrant green on the rim, there are aromas of fresh guavas, asparagus, lemon grass and fresh cut grass … and the taste is all fresh citrus and grapefruit flavours. Serve it well chilled, as an aperitif or with special, spoil-yourself dishes such as fresh wild oysters, asparagus with hollandaise sauce or fresh grilled yellowtail with salsa verde.
